I am always looking for a quick, easy, and tasty recipe to have on hand for when I’m having company over. I made this appetizer a few weeks ago and was pleasantly surprised by its pop of flavor and the pretty presentation. To make this recipe even better, its pretty impossible to mess up the four simple ingredients even for a domestically challenged betty like me!
- 12-15 cherry tomatoes
- 1/4 pound of goat cheese
- 1/4 cup minced basil
- dash of freshly ground black pepper
- Mix goat cheese, basil, and pepper with a fork till well blended
- Cut each tomato in half and scoop center pulp out with a small spoon. This should create a tomato shell.
- Carefully stuff cheese mixture into the tomato shell. Repeat until all shells are filled.
